Kansas City's BBQ vs. Buffalo's Buffalo: The McRib Ain't Got 💩

You know the deal: fire, meat, and a whole lot of flavor. Welp, that is changing a bit today...sorry, no actual fire. IT IS SO COLD OUT! Not the "I don't want to go outside and cook" cold. Like, "My smoker won't run" cold. 😅

The show must go on and for this recipe, I mean, no matter how you make it, it is going to be amazeballs.

This week's Matchup Mashup is a classic playoff rivalry game between 2 of the best QB's in the NFL: Buffalo vs. Kansas City. As with everyone outside of KC, we want to see them get demolished. Not their BBQ, the team. Is it too much to ask for a different Super Bowl?? Maybe if they go back, I'll do a Matchup Mashup with Zebra meat...because of the refs. Bad joke. Let's move on.

This is where the recipe gets fun. Being that it is the playoffs, I've made recipes a few times for both of these teams. I'm not one to sit around and reuse recipes...jk...I did that last week. (Check out the video!), but I don't have a Bills vs. Chiefs recipe.

Basically, with these Matchup Mashups, I need to not only think about the teams, but how I can incorporate our products, AND also make a recipe that is relatable/makeable while being unique...enter the Buffalo BBQ McRib with Blue Cheese Sauce 🤤

Teams: Buffalo Bills vs. Kansas City Chiefs
Products: KC Combo, The All-American, Lowcountry Gold, White Lightning
Relatable/Unique: Check and Check!

Normally, this recipe would go in the smoker faster than a flag being thrown for Roughing the Passer, but it is currently -14F (NO WIND CHILL) and my smoker won't budge. That's okay. Part of life 😡 We will change it up and do some delicious Oven Baked Ribs. The nice thing about this? We want to slightly overcook the ribs. Fall off the bone is the goal. 

Why the hell does that make any sense you ask? If we were JUST eating ribs, you want them "bite through" tender, not "fall off the bone" tender. For a sandwich, I have found the "fall off the bone" is the perfect texture. There's actually a couple fun ways to really mix this up, too. 

1) Use extra spicy Buffalo Sauce to mix in with The All-American.
2) You'll see this one in the video, using different styles of pickles. I am trying out classic dill pickles vs. spicy pickles vs. dill pickle relish.
3) You'll see this in the video as well, classic red onion vs. pickled red onions. This will be a fun thing to try.
4) Smoked ribs vs. Oven baked. I think I know what I would like more, but this is what I have to work with in the Arctic today.

Anyway, with a game like this between Josh Allen and Patrick Mahomes, you could obviously make the classics, Buffalo Wings and Smoked Baby Back Ribs, but why not change it up? Why not do something fun with it? Don't be lame 😂 Let me know who you're cheering for in the comments!
