Buffalo Chicken Meatballs

Like smoked buffalo chicken wings...without the bones!

The How To:


  • 1 lb. Ground Chicken
  • 1/2 c. Sharp Cheddar (shredded)
  • 1/2 c. Red Onion (minced)
  • 2 Garlic Cloves (minced)
  • 1 Egg (whole)
  • 1/4 c. Buffalo Sauce
  • 1/3 c. Bread Crumbs
  • 1 1/2 tbsp. Kickin' Chicken
  • Blue Cheese or Ranch


  1. Preheat oven to 350F.
  2. Place ALL INGREDIENTS into mix bowl. Mix until evenly incorporated.
  3. Roll 2 oz. of mixture into ball. (Should make about 12) and place on baking sheet.
  4. Sear outside of meatballs in pan.
  5. Once seared, bake meatballs are 165F.
  6. Serve hot with side of Blue Cheese or Ranch!


  • Use different buffalo sauces (both brand and spice levels) to your liking!
  • Mix Frank's Buffalo with The All-American to make a Buffalo BBQ Style meatball.

Common Questions

  1. Can I make these in the smoker?

YUP! Smoke at 225F prior to searing. Pull them after about 30 minutes, sear and start dipping!

2. Can I do this without cheese?

Go for it! Or if you just don't like cheddar, try other cheeses (Blue, feta, etc.)
