Shredded Chicken Sandwich

The How To:


  • 4 lbs. Chicken Thighs (skinless/boneless)
  • 5 tbsp. Caffe Tailgate Coffee Rub (divided)
  • 8-10 Pretzel Buns
  • 8-10 Extra Sharp Cheddar
  • White Lightning BBQ Sauce


  1. Liberally season Chicken with rub. Rest for approx. an hour.
  2. Preheat smoker to 300F. Place Chicken onto smoker. Smoke for 30 hour, flip, baste with White Lightning.
  3. After initial baste, flip and baste every 15 minutes 2 times. (30 minutes total)
  4. Pull and Shred. Re-season with 1 tbsp. Caffe Tailgate.
  5. After shredding, warm Bun up. Place Cheese on lower bun, top with Chicken, top with White Lightning.

Totally fine! You can totally still make this delicious sandwich.

Bake the Chicken Thighs at 350F until internal temperature of 170F. Season, shred, etc. like explained earlier.
