Venison Chili - Texas Style

The How To:


  • 1 lb. Ground Venison
  • 1 tbsp. Open Season
  • 18 oz. Tomato Sauce
  • 7 oz. Chipotle Sauce
  • 1 tbsp. Chili Powder
  • 1 tsp. Cumin
  • 1 White Onion (medium, fine chop)
  • 4 Garlic Cloves (minced)
  • 1 tbsp. Brown Sugar


  1. Place dutch oven (or large pot) on burner turned to medium.
  2. Pour in small amount of neutral oil into pot. Place Onion and Garlic into pot. Cook until fragrant (2-3 minutes).
  3. Add Ground Venison and Open Season. Mix in with Onion/Garlic Mixture. Cook until meat is browned.
  4. Add Tomato Sauce, Chipotle Sauce, Chili Powder, Cumin, and Brown Sugar.
  5. Mix until evenly incorporated. Let simmer for 2 hours to let the flavors meld.
  6. Pour into bowl, top with Cheese, Crackers, Jalapenos, etc.


  • Dice Jalapenos for added heat.
  • Add chopped Bacon for additional fat
  • Serve over cornbread
  • This recipe is good with beef and bison, as well!
  • Add some beer for fun. I'd do 6oz in this one.
